Busy Preserving the Garden - by Sunscape

The gardens have been producing nonstop for weeks now. If you are a gardener like I am you have been as busy as I have. I have been harvesting and preserving all kinds of veggies for a month or so. This week was the second round of harvesting beets.

These were the largest ones that I pulled so far and I left the smaller ones to continue growing. I always wash them down with a hose outside so as not to get dirt in the house. It works out well for me and I can sit on the back porch while I cut off the leaves. My husband loves beet greens and I will cook them down with some onion, garlic, and red wine vinegar, oh so tasty!

This is the first round of canning beets from the photo above. I made a spicy variety which I absolutely love. I ended up with 7 pint jars from the first harvest.

After, picking the second round of beets I only got 4 jars which was more than I thought. I still have some maturing in the garden and I also just planted some seed for a late fall harvest. This is the first time I have ever done that, so it will be interesting to see how large they grow.

I still had some onion that I let grow on hoping for some larger bulbs. This is the last of them that I started from seed. I did have a very nice crop considering it was my first time growing them myself.

I washed these outside as well and I left them to dry off in the sun before putting them into my growing room to dry and cure.

Tomatoes

My tomatoes are so tall and producing like mad. I have to harvest them every two days to keep up with them.

Some little critter has been enjoying the tomatoes that are closer to the ground. Also, all of my beans have been chewed right to the ground. I have planted seed three times now and each time something has topped them all off. I guess the little backyard creatures that I so enjoy watching are having breakfast or a late-night snack in the garden.

This is what the plants look like every few days and you can see that they are doing very well this year. I think all the rain we have been having has made a huge difference in the size of the fruit.

The Roma tomatoes are over 5 foot tall and I have been trimming them and tying them up so that they don't break.

This is a large slicing tomato called "Miss Krim". They are very sweet but they split and spoil very quickly. I like to try different varieties from time to time, but this one I will not grow again.

Since I still have a lot of canned tomato sauce from last year I decided to make pizza sauce. This week alone I have put up over 12 pint jars. This should last me until next year's harvest comes in.
