Spice Pumpkin Soup with Palm Sugar

Hi, vegan lovers! I’m so happy—after a few busy days away from home, I’ve finally made it back to the kitchen. Today I’m cooking something light—an idea to help restore my husband’s digestive health. Lately, he’s been complaining of nausea; I think his stomach is acting up again. It had cleared up before, but maybe it’s because he’s gotten used to eating out. So, after discussing it with my mom, she suggested I make this pumpkin dish.




Spice Pumpkin Soup

Spiced pumpkin soup is a dish made by simmering pumpkin in palm sugar water, to which selected spices—such as star anise, cloves, and cinnamon—are added. Actually, I only remembered to add lemongrass after it was already cooked. The combination of all these ingredients in a single dish is served in a serving bowl. At first glance, it resembles porridge, but this spiced version releases aromatic flavors that are sure to make us love it even more. Enjoy it while it’s warm, just like you would porridge—why not try preparing it right now?




Ingredients

200 grams pumpkin 5 grams palm sugar 4 cloves 3 star anise 6 cm cinnamon stick 350 ml water



Instructions

**Cut the pumpkin into small pieces or to your liking, and be sure to remove the tough outer skin.**

**Next, heat the water, add the spices, and bring to a boil.**

**Add the palm sugar and bring to a boil, then add the pumpkin pieces.**

**Then cook until the pumpkin is fully tender and soft, making sure the flavor is just right. If it’s not sweet enough, you can add a little granulated sugar—I usually skip it because I don’t like it too sweet.**

The result is very satisfying—it has a wonderfully aromatic scent thanks to the exceptional selection of spices. This dish has been a great help to my husband, who always has stomach issues. The evenly cooked pumpkin has an incredibly soft texture. The sweetness of the palm sugar is just right, so anyone who tries it won’t get sick of it.
