Young Mango Sambal
Sambal mango muda is one of the processed young mangoes that are grated and then stirred with chili sauce. Now this dish itself is a very popular specialty in Indonesia. Usually mango chili sauce is made from non-vegan ingredients with a mixture of shrimp paste, the use of shrimp paste is what makes it not vegan. That's why I didn't use shrimp paste in making sambal mango this time. In my opinion, the taste is not much different, even fresher without the aroma of shrimp paste.

Ingredients
1 young mango
12 vicious chili peppers
1 tomato
9 cloves shallots
2 cloves of garlic
2 cayenne pepper (optional)
1 tablespoon pair sugar
½ teaspoon salt
Making Procedure

Prepare the onions, chilies, and tomatoes, then fry them in hot oil until wilted and brownish yellow.

Add salt and sugar to the grated mango, and add the grated chili spices. Stir until evenly distributed, do not forget to correct the taste, if it is right, the mango sauce is ready to be served.

Sambal mango is ready to be served, look at the color is very tempting combination of yellowish green color of young mangoes in addition to the red blend of sambal is quite tempting. With the texture of the mango that is not hard because it is finely grated so it is quite well combined.
