Hi vegan lovers, it's great to be back with you to try my vegan recipes. This time, I was inspired by a home-cooked dish that is often served as a side dish in my area: yellow tofu and cabbage soup. The simple combination of dishes makes me really want to prepare it. Because besides being made from vegan ingredients, this dish has a delicious taste and is certainly quite healthy and can be enjoyed at any time.
Now soupy dishes themselves are usually very suitable to be enjoyed during the rainy digin season each. Served in warm conditions makes soup dishes very special to sip at any time. Especially when added with white rice and fried tempeh. The dish is even more delicious. As we know in our area has a lot of traditional dishes including this yellow clear soup which is usually a mainstay of the family menu whenever and wherever.
Ingredients Used
1 piece of tofu
5 pieces of cabbage
¼ teaspoon coriander powder
¼ teaspoon turmeric
1 spring onion stem
2 bay leaves
4.shallot cloves
1 clove of garlic
5 pieces of cayenne pepper
1 candlenut
½ cm galangal
Cooking Procedure
**Step 1**
Cut the tofu into small squares or according to taste.
**Step 2**
Cut the cabbage according to taste, then briefly blanch the cabbage with boiling water.
**Step 3**
Fry tofu until skinned or golden yellow.
**Step 4**
Blend onion, candlenut, cayenne pepper, turmeric powder, and coriander until smooth.
**Step 5**
Saute the spices with cooking oil, then add the bay leaves. Then add enough water about 300 ml.
**Step 6**
Add spring onions and also tofu stir until evenly distributed, then season with salt and also mushroom broth.
**Step 7**
Finally add the cabbage that has been boiled, stir and cook again until cooked.
Result
Yellow soup is ready to serve, in some areas this dish is known as tofu cabbage stew in yellow soup. But I usually go for yellow soup, besides being easy to prepare tofu and cabbage are the right combination of ingredients to make a soupy dish like this. Serving in a serving bowl I get about 2 servings of soup, which is quite a large portion.
It was savory and very fresh from the fresh tofu I bought at the market. I think you should add a little lime when enjoying it to add a nice freshness to this dish. It's great to be able to make something special at home to enjoy with the family.
