Hello, I just bought 2 kilograms of sweet corn and I will make it with various dishes. And this afternoon I wanted to make a simple corn cake that even if you have never made it, you will not fail. And for the recipe I will write below.
The ingredients I use to make this cake I share below as follows:
**1. 500 grams of sweet corn**
2. 5 tablespoons of tapioca flour
3. 8 tablespoons of rice flour
4. Fresh grated coconut from half a coconut
5. 2 tablespoons of granulated sugar
6. 250 ML of water.
And let's see together how I make this simple cake:
1. The first is I peel the corn first but I don't throw away the corn husks because I will use the husks to wrap the cake. After I peel the corn then I take the flesh and I separate it from the cob using a knife
2. After all the corn kernels are finished, I separate them then I put them in a blender and I mix the water that I have prepared earlier and I blend them until smooth, Oh yes, don't forget the granulated sugar,
3. The next step is I put tapioca flour and rice flour in one container as well as the grated coconut
4. Then after all the ingredients are in then I put in the corn that I have blended earlier
5. Stir continuously until all the ingredients are evenly mixed and thicken like this
6. After that, take a wide corn leaf and slowly take 1 tablespoon and wrap it slowly until all the dough is used up
7. And because I also ran out of corn leaves, I used the mold provided. After that I steamed it over medium heat for 20 minutes
8. And without realizing it, after 20 minutes of waiting, my corn cake was finished and I warmed it up first.
As I expected, it tastes a little chewy, soft and has a corn flavor. The only thing that bothers me is the taste of granulated sugar, even though I only used 2 tablespoons of granulated sugar and it wasn't full. If you like a sweet taste, the amount of [salt sugar] needs to be increased, but for those of you who have reduced granulated sugar or even stopped using it like me, it seems that using granulated sugar is not a good thing and you can replace it with stevia sugar.
