
Today, I share with you, the treasure and the joy of preparing chicken salad, a recipe well learned from my mom. It is a delicious recipe that breaks with the traditional and it all starts with my star ingredient, the essential foundation "our homemade mayonnaise", which I make from scratch as my beloved mother taught me. This homemade mayonnaise is that creamy base that envelops everything, it is a robust profile totally different from the one you know.
The chicken salad visually is a feast of contrasts where the creaminess of the potato and mayonnaise, the sweetness of the raisins, the bright green of the peas and the solidity of the whole eggs, make it irresistible.
The secret of this delight is in the intense balance and the fusion of the sweet and sour of the salty, the sweet and the subtle, thanks to the touch of honey and the pinch of Dijon mustard, each spoonful of the salad, is an experience of freshness, creaminess and that incomparable flavor that takes me to mom's house, to my childhood, to home, to the family reunion.
In this salad we cook the chicken breast separately with essential dressings that intensify the flavor.
I'm going to share the recipe and the ingredients to assemble the chicken salad:
4 boiled potatoes, 4 boiled eggs, 150 grams of peas, I prefer to use the frozen peas because they are fresher. 100 grams of finely chopped white cabbage, 250 grams of pre-cooked and seasoned chicken breast and 150 grams of raisins.
For the mayonnaise:
1 egg at room temperature, salt to taste, vinegar or lemon juice at room temperature and 200 ML of vegetable oil.
For the chicken breast:
250grams of shredded breast, 3 sweet chili peppers cut, 1/2 white onion finely cut, 1 large clove of garlic, 1 tablespoon of mustard, 2 tablespoon of worcestershire sauce, 3 tablespoons of olive oil. Fry everything together until golden brown and set aside.

To assemble the salad we must cut the potatoes and eggs into small squares.
In a bowl add cabbage, peas and pre-seasoned chicken, then add raisins and homemade mayonnaise. Add 1 tablespoon of Dijon mustard, marinade, salt and pepper, to taste. Stir until the mayonnaise embraces each ingredient and finally refrigerate before serving and enjoying.
