Hello, it's Sunday again! Family Day for most but a lazy day for me.
I woke up at four in the morning today though I still felt groggy. I thought of eating breakfast but I can't pull myself to walk to the kitchen so I stayed in bed and submitted a post I was supposed to publish last Saturday night.
After that, I switched off my AC and opened the windows and lighted an incense and prayed. I usually switch off the AC at midnight because the weather is cool around late evening to mid-morning but I fell asleep early last night. Lol.
Due to the cool weather, I didn't notice that I dozed off after closing my eyes to let it rest. I woke up again around two hours later and slept again because my body still felt sleepy. Lmao. I was awaken around lunch time when I dreamed that there was an earthquake. I quickly checked my app and looked for updates but there was none. Whew. There were frequent earthquakes on different areas of the Philippines since October of last year and earthquake notifications makes me a bit anxious.
I had my breakfast, which I cooked yesterday, and proceeded to prepare my dinner.
One of the easiest dish to make and also among my favorites is the Tinolang Manok. It's chicken with a light but flavorful soup. I like my Tinola with a dominating ginger taste. I also use potatoes instead of green papaya.
A complete tinola dish for me includes moringa leaves but then the weeds in the backyard have already grown tall that I can no longer reach our moringa tree. So for now, I only added bok choy.
Tadah! Tinola is among the few dishes that I can cook without looking on a guide or recipe book. I always cook Tinola that is good for four servings. This means I don't have to cook dinner for the next three days.
And that's how my Sunday went. Boring but I had more than enough sleep. Haha. Well, at least I am rested and ready for the challenges of the upcoming week.
