The last time Mommy D made an Espasol, I was not watching her or even helping her and so, I don't have enough ideas as how To make it and the needed ingredients asides from the main ones. But this time, I know and I even helped her making it and I had fun making it, ahhh, except on the non stop stirring a super sticky mixture in the pan which is tieing to the arms. The still, the tiredness are all worth it because we got sweet and milky Espasol during Christmas, Yayyyyy \(^o^)/
And so, let me share again my Mommy D's Espasol recipe. I won't put the right measurements coz to be honest we didn't use measurement in here. Lol. Just do what you're heart desire. Its not that if a complicated recipe anyway.
The Ingredients:
- Glutinous Rice Flour
- Wheat Flour
- Coconut Milk
- Condensed Milk
- Margarine
The last time we used Pure glutinous rice flour and that's why it is so soft and chewy. But This time Mommy D decided to mix flour in it to make it not too soft and chewy. She didn't Put much, like 4 tablespoon only. Seriously, you can remove the flour in the recipe, that's not in the original recipe anyway.

First things first, we have to roast the glutinous rice flour. Roast it in a pan in low heat until it change color. Don't burn it please.

After like 15 minutes of stirring it nonstop, we move the roasted glutinous rice flour into a clean pan. We also set aside a cup of it for the coating of the espasol. Sorry it's super messy here. Lol. Can't help it yk. Lol. Its flour. ƪ(‾.‾“)┐

Then in the same pan, we'll mix the coconut milk and condensed milk together. Let's just bring it to boil. Ahh, we also added Margarine here. It's salted yes.

Once it started to boil, lets add the glutinous rice and the wheat flour together and this is where the hard part will come. We need to mix it nonstop until they are well combined, stirring and turning to avoid sticking it to the pan also for it not to get burn. We'll do it for 10 minutes or just until the mixture become real sticky.

And now on to the next and fun part -well for me. Haha. That's forming a round and flat sticky mixture then coating it with roasted rice flour.

There it is. Its a good thing Mommy D has gloves at home. We easily round all the espasol mixture and without it sticking to our hand.

Look at all that. We actually made a lot, 56 in total. And I can't smell it but the oldies said it smells so good. I wish I can smell it too. Huhu

And here'e everything we make. I just learned another recipe from Mommy D. I hope i can make this too, soon. On my own. The ingredients needed are all not that expensive. And you only need a few of them. And we want, we can just replace condensed milk with evaporated milk and use sugar instead. On this recipe we didn't use any sugar because it is already sweet.
Anyways, we enjoy all of this with our love ones during Christmas. And actually it lasted us for days, 4 days I think. We only eat it after every meal haha. Its the best panghimagas or dessert during that time \(^o^)/. And another thing, we made another batch before New Year because WHY NOT no? Lolol, but this time we only made 36 pieces. Teheee (^._.^)ノ.
