Ash plantains, also known as alu kesel in Sinhala, are a beloved and common staple in many Sri Lankan kitchens due to their soft texture and subtle, comforting flavor. One delightful way to enjoy them is by preparing them as a tempered dish – a method that not only adds a savory kick but also enhances their unique taste beautifully. With just a few simple ingredients, this snack or side dish transforms into a flavorful, satisfying, and nutritious treat.
So, let’s take a look at how to prepare this delicious dish step by step.
Materials Used.
Ash plantains 200g.
1/2 Teaspoon of turmeric powder.
1/3 Teaspoon of Fenugreek seed.
1 Teaspoon of Chilli Powder.
1/2 Teaspoon of Mustard Seeds.
Some water.
Coconut oil.
Salt to taste.
A sliced tomato.
Coconut milk 100ml.
2 Chopped green chilli pods.
2 cloves of chopped garlic.
A piece of cinnamon.
A little chopped onion.
1 Pandan leaves.
curry leaves.
About 2 chopped dried chili peppers.
The cooking process as follows.
First, take the ash plantains, peel them, and cut them into small cube-shaped pieces. Then, rinse them well using water mixed with salt and turmeric.
Next, place the plantain pieces in a bowl and mix them well with salt and turmeric powder.
Now take a cooking pan, add coconut oil, and place it on the stove. Once the oil is hot, add the plantain pieces and fry them until they turn golden brown.
Now take a separate pan and add about two tablespoons of coconut oil. Add fenugreek seeds, mustard seeds, cinnamon, garlic, shallots, green chilies, curry leaves, and pandan leaves. Mix well and sauté the mixture until it becomes fragrant and slightly golden.
Now add curry powder, chili powder, turmeric powder, salt, and chopped tomatoes to the pan. Mix everything well to combine.
Finally, add the fried ash plantain pieces and coconut milk to the pan. Let it simmer for about 2 minutes, then remove from heat.
