Nutritious cocoyam serve with oil bean sauce very healthy

Warm greetings to everyone one and my fellow foodies I greet you all I have come with this native food called cocoyam EDE in our native language.
WHAT IS COCOYAM
Cocoyam is another tuber crop,used mainly for human food .It is commonly grown amongst small scales farmers who operates within the subsistence economy.In the past,it is regarded as a lowly importation crops which cultivation and consumption lie within the less privileged farmers.
And cocoyam can be used in so many ways like you can use your cocoyam is soup thicker and also use as swallow and you can also cook it in so many ways like porridge, white with different kinds of sauce and so many ways.
When it comes to sweet and healthy native food cocoyam is one of them it contains a lot of health benefits and many nutritious facts like carbohydrates, potassium and magnesium.
Let's go on how I prepare my cocoyam
INGREDIENTS USED
10 piece of Cocoyam
3 pices of fresh pepper
1/2 medium Onion
Salt to taste
1/4 cup of red oil
Handful of oil bean
Water.
PROCEDURE
I will wash my cocoyam very well because I will cook with the peels put into my pot add water and cook I also cut the bigger ones into two.
While waiting for my cocoyam to be done I will now prepare my oil bean sauce.
In a clean plate I will put my oil bean.
I will now slice my Onions and my pepper.
I will now add my fresh red oil, my salt, my onions and my pepper and stir very well.
Here my oil bean sauce is ready.
I will now check my cocoyam if is ready
Here my cocoyam is ready.
I will serve with the shells and peel when am eating.
Looking at this dish is very simple but very healthy.
