Flavourful ripe plantains porridge very healthy

Hello everyone how are you all doing today, I hope you all are doing wonderfully well
So today I have this recipe I prepared for a visitor , one of my husband friend came to my house today and saw many ripe plantains in my kitchen and he was very happy because is been a long time he has been carving for a ripe plantain .
So I ask him how he want the plantain and he said that he prefers me to fry them but since a week now I have been frying plantains enjoying them different things like,
Enjoying my fried plantains with pap
Enjoying my fried plantains with eggs
Enjoying my fried plantains with rice
And many more so I have to convince him for us to try a new thing with our ripe plantains which is cooking my ripe plantains porridge so he said that he don't have a choice because whatever I decide is good by him.
We have two classes of plantains which is ripe plantains and unripe plantains each of them has different health benefits.
Unripe plantains gives iron and helps to build strong bones and strong immune system while ripe plantains gives vitamin c and also rich in fiber and carbohydrates and also has natural sugar it also helps in building the immune system.
INGREDIENTS USED
5 piece of ripe plantains
3 piece of fresh tomatoes
4 piece of fresh pepper
1/2 big Onion
5 stems of scent leaf
Salt to taste
1/4 cup of groundunt oil
Water.
PROCEDURE
This process is very easy and it came out very delicious and I will explain step by step.
STEP 1
I will first wash and peel my plantains and cut them into pieces
I will also wash and cut my tomatoes, and I will wash and cut my onions and my pepper and also my scent leaf.
Here all my ingredients are ready.
STEP 2
In a clean and dry pot I will put my groundunt oil allow to heat I will put my salt, and now put my onions and stir.
I will now add my fresh tomatoes and stir till my fresh tomatoes dry water I will now add my pepper and add water.
STEP 3
I will now put my plantains and cover my pot and allow my plantains to get done.
STEP 4
Here my plantains is done I will now add my scent leaf and stir.
Here my food is ready.
Looking at this dish is very simple and tempting the taste is topnotch and am glad he likes the meal I prepared for him.
