Vegan Nkwobi rice recipe

Nkwobi is a special delicacy in Nigeria, originating from the igbo tribe. This meal is basically meat served in a thick sauce. But this time we're veganizing it, instead of the meat we will use rice for this delicacy and it tastes as great as it is.
So I'll share with y'all how the sauce is made and how the rice was used instead. So get ready as I start with the list of ingredients needed!

Ingredients

  • 2 balls of onions
  • 6 bonnet peppers
  • 3 cups of rice
  • 1.5 cooking spoon palm oil
  • 0.5 cup potash water
  • 1 tablespoon mixed natural spices
  • 1 tablespoon black pepper
Wash and Parboil the rice
While at it, dice the vegetables. Slice the onions, scent leave, and grate the pepper
After that we check if the rice is done parboiling then sieve out the water.
Wash the rice again and put it in a pot of boiling water and let it boil and soften
While at it we start mixing the sauce . Start with pouring the palm oil in the pan then add the potash water to thicken it
Stir the oil to correspond with the potash water. Then add onions to it
Next add salt, mixed spices, scotch bonnet pepper and black pepper in it and stir thoroughly to mix.
After mixing everything this is how the sauce will look like
Next we check for the rice, if it's soft enough we bring it down. The we slowly mix the rice in the sauce and incorporate everything nicely.
Then we put it to heat for a little while. Then added the scent leave to it
And after that the rice is ready to be served!
I loved the tasted of the sauce in my rice, it was perfect, really nice and delicious. I love it so much! Since I was the only one at home, I had 3 meal servings from the amount I cooked , means I ate it 3 times. I really loved trying this out, I saw it being cooked online, but with spaghetti so I decided to try mine with rice and it turned out really good.
