Having leftovers at home is a good thing because we can easily use it for a whole new meal.
This time I wasn't going to let the potatoes waste and we wanted to make stew too, so I thought making stew with the potatoes would be a great idea, so that's what I did!
Potatoes have a unique way of adding creaminess and flavor to dishes, so I was really excited to see how they would work in a tomato-based stew. And the result was fantastic! Let me walk you through the process:

2 cooking spoon vegetable oil
1 medium size onions
4 fresh tomatoes
A cooking spoon scoop of tomato paste
3 carrots
3 small potatoes
1 teaspoon cinnamon

Next, i put water in a pot and put it to heat , then added the potatoes in it and give it a few minutes to boil.

Next I cut the pepper onions tomatoes in smaller pieces and got them ready to blend.

Next I blended them properly and set them aside.

While at it I checked the potatoes to see if they were soft enough and I got them out and mashed them with a spoon.

Best I poured in the oil and heat it up for seconds and I went in with my blended paste that is the tomato pepper onions paste and I stirred them in properly

Next i added the tomato paste and I was stirring it in properly to blend in

I then added the cinnamon powder to it and stirred

Next thing was to add the potatoes and stir them in properly to blend in properly in the stew

Next I added the carrots to it, and after a few minutes of letting everything boil properly, it was ready!

So I boiled up some rice to go with it, stew is best served with rice hehe. So as soon as the rice was done, it was perfect time to serve

This potato stew turned out to be a very good way to repurpose leftovers and create something delicious. The mashed potatoes blended nicely into the stew, added thickness and the rich texture that made the meal more satisfying. So thus was a good way to reduce waste while still having something very nice!
