Today I want to share a recipe for processed tofu which is of course vegan friendly so friends don't need to worry when enjoying it.
I made "basil tofu pepes" when usually tofu pepes use eggs to bind the dough but I didn't use them and the taste was still delicious. Pepes is a traditional food in Indonesia. It is said that it is called pepes because the food is cooked using banana leaves as food wrappers and pinned up.
There are many types of pepes ranging from tofu pepes, mushroom pepes, chicken pepes, fish pepes, salted fish pepes and many more. Pepes is made using spices and basil leaves. How to make pepes is very easy, just mix all the ingredients then add steamed basil leaves and grill or roast. Immediately, I will show you the ingredients and how to make tofu pepes.
Materials needed:
1 board of white tofu weighs 270 grams
1 bunch basil leaves
1 green chili
3 bay leaves
1/2 tsp turmeric powder
1/2 tsp mushroom stock
Banana leaves for wrapping pepes
Ground spices:
3 red onions
2 pieces of garlic
1/2 tsp pepper
1 candlenut
1/2 tsp salt
How to make :
- burn the banana leaves first so they are easy to shape when wrapping the tofu pepes
- puree or crush the tofu

- prepare bay leaves then cut green chilies.
- grind the spices then mix them into the tofu until evenly distributed, if it suits the taste add the basil leaves and stir evenly.
- Place the tofu mixture on a banana leaf, add chili pieces and bay leaves then wrap the tofu pepes.
- steam the tofu in a steamer pan for approximately 10 minutes.
*grill the tofu pepes, I use non-stick Teflon, bake until cooked.
- Pepes tofu is ready to be enjoyed.
