Brown sugar is basically the raw sugar with the molasses still in it. It's less refined than regular sugar, typically. It's also produced on a commercial level by combining the 2 ingredients back together. However, you can easily make it at home with your own granulated sugar and molasses. The basic recipe is a cup of sugar to a Tablespoon of molasses.
I prefer to use a stand mixer for making homemade brown sugar. You can also use a food processor to blend the white sugar and molasses. If you really want to, you can simply use a wooden spoon and large bowl to mix this up. That works well, but just takes a bit longer to mix.
Store your homemade brown sugar for up to 6 months in an airtight container. If it starts to get rock hard, simply add a piece of bread in the container.
You can also use a terra cotta piece for storing your brown sugar longer term. You'll soak it in water for several hours, and it keeps your brown sugar soft and moist.
