Dear friends, vegan lovers, and community, First of all, please don’t get confused by this post. A few weeks ago, I shared a recipe that looked similar, using chia seeds.
In India, when the weather is very hot, we often don’t feel hungry. During those weeks, I mostly made more cold porridge using various ingredients, and having the coconuts from the garden, taking advantage of using enough fresh coconut milk. This time, I used tapioca pearls, which we call sabudana, along with tropical fruits like mango, banana, pomegranate, and grapes.
Sabudana known as tapioca, is gluten-free and has more starch, and contains very limited nutrients. But it is filling food. In hot summer, when we don't feel hungry, it is good to use together with coconut milk and fruits.
Ingredients:1 cup soaked tapioca pearls Sabudana.
3 shells of fresh coconut
pinch of salt
4 cardamoms
1 tbsp cashew from garden to plate.
1 tbsp pistachios and almonds
25 black grapes
2 bananas
1/2 pomegranate
1 Alphanso mango
1 tbs melon seeds
First, I thought of using jaggery, but I remembered the dates stored in the fridge have to be finished before we travel, so I used dates instead of jaggery.
Making coconut milk
Cutting and peeling coconuts.
ground them into a shredded form
And again, ground in the big mixer jar to make milk.

When it was ground and became a fine paste,
Used cheesecloth on a strainer to strained it.
Gathered the coconut milk in the bowl and kept it aside.
This is the way I made coconut milk to get a natural taste.

In a saucepan, added 3 cups of water and a pinch of salt.
kept water for boiling.
Added soaked sabudana into boiling water.
Continuous stirring was to avoid it sticking to the bottom.

When the sabudana became transparent, I poured it into a strainer and discarded the excess starchy water. Pouring cold water over them washed away any stickiness.

Opened pomegranate
Chopped nuts.

Separated pomegranate kernels, cut the grapes in halves,

Removed seeds from dates and cut them into small pieces.

Cut bananas into slices.

Cut a mango into small bites.

Sabudana is cooled down.

Placed 1 tbsp sabudana in a bowl and poured coconut milk 1cup.

Stirred the sabudana to incorporate with the coconut milk.

I prepared 2 bowls.

Added date pieces to sabudana milk.

Grapes and pomegranate kernels.

Banana slices.

Mango bites.

Nuts

Dry-roasted melon seeds and sprinkled cardamom powder.

I made it healthy, nutritious, cool, filling breakfast, and we enjoyed it.
