Raw mango drink/Ambyache Pannhe for cool down heat.

Last month in India, (I heard it's more warmer now than when we were there). The temperature suddenly increased, making the heat unbearable. I constantly felt the need to drink cold water or other refreshing drinks. However, simply drinking wasn't enough; the humid atmosphere made me sweat even more and left my body feeling dehydrated.
In Maharashtra, we traditionally use raw mango drinks to cool down our body heat. Since we have a lot of organic mangoes in our garden, I often make this drink in various ways. However, it hasn't always been easy to take photos and share the recipe. One time, I managed to capture some photos for this recipe, and today, I would like to share it with you.
Ingredients:
4 raw mangoes
70 grams of jaggery
1 teaspoon of salt
A few mint leaves
4 lime leaves
1/2 teaspoon of fennel seeds
Pinch of roasted, crushed cumin
1 teaspoon of tukmaria (basil seeds)
Water
First, wash the mangoes and peel them using a peeler or knife.
Cut off the stem and remove the stone/seed, discarding them, or you can cook them first and remove the stone/seed after all the pulp is released from the mango.

I cooked them and then removed the pulp, discarding the stone/seed.
Add jaggery and salt to the mango pulp. Cook it again to melt the jaggery in the pulp.
Remove the mixture from the heat and let it cool.
In a mixer jar, add the lime leaves and fennel seeds,
Along with mint leaves and the unmelted mango bits.
Blend everything until you have a fine paste.
Strain the paste using a strainer to separate the thick slurry.
This thick slurry can be stored in the fridge for 3-4 days and used whenever needed. I kept half of it in a refrigerator and half I used to make a 500 ml drink.
Soak 1 teaspoon of tukmaria (basil seeds) in water. This amount is sufficient for a 500 ml drink.
Pour around 200 ml of strained mango slurry into a mug. Add 200 ml of water to it. You can increase or decrease the water quantity according to your taste.

Add a pinch of roasted, crushed cumin to the drink.
Stir well and pour into drinking glasses.
Enjoy your refreshing raw mango drink! Like we did.
Thank you.
