Last night I was encouraged to make something different for my weekday lunches, and yes, I make one meal on the weekend and keep it in trays to reheat at work. I do it for the time factor, it allows me to sleep a little more in the mornings and get more organized in how much I eat and how I spread out my finances.
I had already eaten rice last week, so I decided to make an inexpensive pasticho to treat myself and I spent just $10 for a pasticho that will last me 5 lunches.
I used:
  • 400gr of ground beef
  • One sachet of tomato puree
  • Noodle type pasta
  • 300gr of cheese
  • 300gr mortadella
  • 100gr milk
  • 50gr wheat flour
  • 3 tablespoons butter
  • 1 banana
The preparation was very easy, I soaked the pasta in salted water to soften it a little, cooked the meat with butter and tomato puree, fried the plantains and made a simple bechamel sauce with butter, milk and wheat flour.
In the end I just assembled the layers, starting with pasta, meat, bechamel, fried plantains, mortadella and cheese, and repeated. I baked for 25 minutes and that was it. All that was left was to portion into containers for my lunches.
