For the preparation of fondant, water, gelatin, glycerin, glucose, butter, impalpable sugar and essence or flavoring are used. There are three ways to prepare the fondant according to the need: liquid fondant, which is usually used as a filling or coating (when its finish is smooth and shiny), elastic fondant, which is used by stretching it to cover and decorate cakes (when dry its finish is smooth and matte) and the fondant extended or cold. There is also a kind of fondant that is made from marshmallows, which is also easier to prepare than the original fondant, and, obviously, is used for the same purpose. Its main difference is that it is less sweet and cloying.
There are also homemade and inexpensive ways to prepare fondant; in one of them only marshmallows and impalpable sugar are needed; Its preparation consists of putting the marshmallows in a bowl and putting them in the microwave for a minute and until they are completely melted. On average they are approximately 4 to 6 minutes depending on the power of the microwave oven, when you have the elastic consistency little by little the impalpable sugar is added and mixed with the melted marshmallows until you have a firm and elastic consistency. To preserve it you can cover with a little glycerin above the surface of the dough and wrap in plastic to place, keeping in the refrigerator until it is used.
The difference with elastic dough or rubber paste, lies in the composition and especially texture. The fondant has among its components gelatin (colapez) and elastic mass, gum tragacanth.
