Been waiting all week for this barbequed chicken, marinated it for over 24 hours with a variety of things-mostly soul seasoning. Soul seasoning has salt, sugar, paprika, black pepper and 'other spices', I added allspice, a little more sugar, some Worcestershire sauce, some crushed red chilli peppers and a dash of vinegar. It's my Canadian version of Jerk flavouring, although I didn't use a sauce, the marinade tastes almost as good and probably saves on some of the calories.

It tasted better than it looks, just make sure you marinade it a long time periodically mixing it to make sure the meat soaks in all the flavours.

Make sure the grill is hot before you put the chicken on it or it will stick to the grill, any sauce doesn't help so I always save that for after, you may have noticed the Frank's Red Hot, I'm a huge fan.


Just about done, it's hard not to burn the tips the fit down the grill, the rest of the black is mostly the sugar. If you don't like it don't eat it!
Yesterday we ordered Indian food and for some reason, they gave us way too much rice, so I added some kidney beans for some rice n peas.

We made a salad with a sour cream dressing and some leftover cheese, it's the least Jamaican thing on the menu. One thing we never do is stick to the same cuisine. Toronto is the best for food, you can buy anything from anywhere and our cuisine is a mix of it all.

Co-workers are gonna be jealous when I heat some leftovers up for lunch tomorrow. Later on, I'll review some of the Jamaican restaurants in the area, not gonna lie, their jerk chicken is better than mine.
