Well it has come, and it has gone. Thanksgiving is over, and the Christmas madness has started. But here is a quick update on the Turducken. So It took me about 1.5 hours to construct it, now knowing how it is done, could do it in about 45 min. I put the smoker in the back of my truck, because the recipe said it would have to cook for 11 hours, but that was not the case. Here is the progression
At the 3 hour mark, I went and helped my wife with something, thinking I had at least 5 hours left. I came back, and the internal temp was 200 degrees, I was going for 165. It got way over done, and I am not sure how the time was so different, maybe because the smoker cooks faster? So we still ate it, inside meat was fine, but the outside was pretty dry. So I will only cook it next time for like 3.5 hours at 350, or mess with it and cook it at a lower temperature. Here is a cut picture.
