One meal I absolutely love preparing and devouring is (Ewa Aganyin) beans cooked in a rich, spicy stew, paired with crispy fried dodo (plantain) and fried yam. It's a classic Nigerian combo that's comfort food at its best and full stomach well.

The experience of cooking Ewa Aganyin is always satisfying. The aroma of the stew simmering with spices, the sizzle of plantains and yam hitting hot oil, the flavors melding together it's a treat for the senses. The powerful ingredient that makes my Ewa Aganyin special is DRY FISH AND PONMO (Cow skin), the smoky flavor it adds to the stew is a mighty one you cant let's go. It gives the beans soup that extra boost of yummy making the whole dish more savory and crave worthy. How I prepare It

  1. I start by boiling beans, till it is soft.
  2. In a separate pot, I prepare the stew with Red peppers and plenty onions, and dry fish if ponmo is available you can cut it into small pieces to garnish it
  3. I fry dodo and yam till crispy.
