Ice Coffee Grass Jelly

I am so lucky to have a garden and grow so many plants here. It's almost three years since I buy a small pot of a plant and you can called with Cyclea barbata, also known as green grass jelly. There are two types of grass jelly, black and green, but they seem to come from the same leaf with different process methods. But one of my favorites is green grass jelly.

If you curious about jelly and grass jelly is different. Jelly is usually made from seaweed, naturally from the sea or ocean, but grass jelly is made from leaves. Yap, climbing leaves that are very strong and can survive in various climates (i think survive on summer), even without much attention. I have a pot of fairly mature grass jelly that I never tend to, only watering it with rainwater when it rains. It's that easy for me to care for it.

Grass jelly is now become my favorite drink and I usually mix it with coffee milk. It's delicious, sweet, and very refreshing in hot weather.

Green Grass Jelly Iced Coffee.

  • 40 grass jelly leaves
  • 600 ml water
  • 3 cups with lids
  • 16 g coffee powder
  • 20 ml maple syrup or something sweet you like
  • 150 ml fresh milk

So... there's a process involved in making the grass jelly until it forms a jelly-like consistency. The chlorophyll extract helps everything bind together like gelatin. I harvest it from my garden first and washing with clean water for 3x times.

Of course, I blend it in a blender afterward. You can even knead it with your hands, but I really wanted a thick texture, so I just blended it and strained it to keep the leaves out of the cup.

Add 2 drops of stevia and refrigerated it for 4 hours minimum. It do not take long time, but it does require patience, haha, but the taste never disappoints.

After that, I made a double shot of espresso and added the grass jelly to the glass, sweetener or syrup, and milk. Wrap it up! Add ice cubes, and you've got an amazing drink this afternoon.
