I'm finally catching up on some photo editing and taking time to share a few posts. I have been so busy cleaning out gardens and preparing beds for planting that there wasn't much energy left to do daily postings. This was what I decided to make for Good Friday, a fish fry! My brother always brings me Catfish from Virginia when he visits, along with Venison. I had a large package in the freezer and decided it was a good day to make it.
The first round of Bok Choi in the hydroponic floats was ready for harvesting. I decided to make a stir fry with it for dinner this week. I did not want it to get too large as I wanted it nice and tender. The stems were perfect for making the stir fry. Once they were washed and cleaned, I slivered them along with two carrots.
Another week has flown by, and the weather is finally warming up a bit. I walked around the gardens to see what was blooming for the 3rd week of April. These Hellebores are a pretty dusty rose and the only clump of this color that I have left.
This is Charlie, my nieces Himalayan cat who decided to bend down the plant leaf for some personal grounding time. Charlie loves lying on top of her dining room table while she works on her computer. I guess the stack of paper is the perfect spot.
Yay! Spring has Sprung! The early flowers are in full bloom now that the cold temperatures are disappearing. This is a pink variety of Candytuft that is next to my front porch. I love the sweet pale pink compared to the white variety I have in another garden.
When it's raining and too cold to garden, yup, I pulled out the canner and made "Spicy Pork". I had these two pork loins taking up space in the freezer, so I thawed them and preserved them for the pantry shelf. After slicing them both into large chunks, I baked them at 425°F. for 30 minutes to lightly brown them.
