Fagioli all' uccelletta a tuscanian way for cooking beans and sausages!

Today I propose another typical Tuscan dish, as you know Tuscany is my land and I am very proud of it, it is a land of art, culture, fashion, landscapes, mountains and sea and obviously delicious dishes! Beans all' uccelletta are a very tasty and tasty traditional dish and also very nutritious, let's say that I recommend cooking them for lunch and not for dinner! The name "Uccelletta" probably derives from the fact that this dish was used as a side dish for dishes based on small birds such as the thrush.

For this dish you need: cannellini beans 250 grams, it would be better to have fresh ones left in for a long 12 hours but otherwise pre-cooked canned beans are also fine. 300 grams of Luganega sausage. 220 grams of tomato puree five tablespoons of extra virgin olive oil four cloves of garlic four tablespoons of salt First prepare a large pot with a drizzle of oil in it and then drain the beans (if they are canned like I used or soaked).

Then put the garlic cloves and the beans in the pan, frying them in the oil for about six minutes, then add the tomato sauce, slowly, stirring over medium heat, taking care that the sauce and beans are well mixed.

Then we move on to the sausage, which just needs to be divided into small pieces, with a knife or by hand if the meat is particularly soft like I did. Add the sausage to the pan and then also add the salt and another couple of tablespoons of oil, continue to stir and mix well for about half an hour. Then the beans with uccelletta will be ready to serve, preferably with a couple of nice slices of toasted Tuscan bread! A slightly heavy recipe but really very good and traditional!
