We are in 1574 and Master Valerio of Flanders, Flemish Leuven, was engaged in the realization of the stained glass windows of the Cathedral of Milan. 

At his side was a helper called Saffron: the reason for his nickname was linked to the habit of the assistant to always add a hint of saffron to the colors, to create a brighter effect.


One day to tease him, the Master told the young helper that if he continued like this, he would end up putting saffron in the dishes as well. 

Said, done!
 
As a joke or small spite, Saffron, on September 8, 1574, on the chance of the wedding of Valeria’s daughter, agreed with the cook a variation in the wedding menu: rice, seasoned with simple butter, would also be added a pinch of golden spice. 

To the young man’s amazement, the diners appreciated the idea both for the taste and for the coloured note added to the dish.

Siamo nel 1574 e Maestro Valerio di Fiandra, fiammingo di Lovanio, era impegnato nella realizzazione delle vetrate della Cattedrale meneghina. 

Al suo fianco lavorava un aiutante chiamato Zafferano: la ragione del suo soprannome era legata all’abitudine dell’assistente di aggiungere sempre una punta di zafferano ai colori, per creare un effetto più brillante. 

Un giorno per prenderlo in giro, il Maestro disse al giovane aiutante che se continuava così, avrebbe finito per infilare lo zafferano pure nei piatti. 

Detto, fatto!

Per scherzo o piccola ripicca, Zafferano, l’8 settembre 1574, in occasione delle nozze della figlia di Valeria, concordò con il cuoco una variazione nel menu nuziale: al riso, condito con del semplice burro, sarebbe stato aggiunto anche un pizzico della spezia dorata. 

Con grande stupore del giovane, i commensali apprezzarono la trovata sia per il gusto sia per la nota colorata aggiunta al piatto.

Ingredients:
- 400 g rice (preferable Vialone nano rice, typical of Veneto)
- 60 g grated cheese (preferable parmigiano reggiano, typical of Emilia Romagna)
- 60 g butter (preferable at Km 0)
- 1 liter of vegetable broth
- 4 small leeks
- 1 sachet of saffron

- 60 g di burro (preferibile a km 0),
- 1 litro di brodo vegetale,
- 4 porri,
- 1 bustina di zafferano

You prepare about 1 lt of vegetable broth.
Finely  you chop 4 leeks.
In a large pan, you pour 25 g of butter, then the chopped leeks.
Wilt over medium heat, stirring occasionally to soften.

Preparate circa 1 lt di brodo vegetale.
Tritate finemente 4 porri.
In una padella ampia versate 25 g di burro, poi i porri tritati.
Fate appassire a fuoco medio, mescolando di tanto in tanto per farli ammorbidire.

Once browned, you can pour the rice:
the rice will absorb the butter and mix with the leeks. 
When it is toasted and translucent, you can blend it with white wine. 
You let the alcoholic part fade a few minutes.

Una volta rosolata, potrete versare il riso: 
il riso assorbirà il burro e si amalgamerà con i porri. 
Quando sarà tostato e translucido, potrete sfumare con il vino bianco. 
Lasciate sfumare la parte alcolica qualche istante.

You pour the broth very hot, until covered and  you continue cooking over high heat, pouring hot broth as needed. 

At ¾ of the cooking, add the saffron pistils: 
you wait a few moments that soften, then  you stir: 
they will release their scent and color. 

When there is a minute left from the end of the rice cooking, you remove the pan from the heat, you add about 120 g of butter into small pieces, and stir.

Versate il brodo molto caldo, fino a coprire e proseguite la cottura a fiamma vivace, versando brodo caldo al bisogno. 

A ¾ della cottura, unite i pistilli di zafferano: 
attendete qualche istante che si ammorbidiscano, poi mescolate: rilasceranno il loro profumo e colore. 

Quando manca un minuto dalla fine della cottura del riso, togliete la padella dal fuoco, aggiungete circa 120 g di burro a pezzetti, e mescolate.

Also, you pour the grated parmigiano reggiano cheese, you stir vigorously, so that the butter and cheese very cold create the thermal shock that will favor creaminess and shine to the risotto.
